White Chocolate Almond Cookies
This is a variation of White Chocolate Macadamia Cookies. I used almonds instead because macadamia nuts can be very expensive and most people don’t have macadamias sitting in their pantry. Something that most people do have however, is almonds. So if you would still like to enjoy this classic recipe and you don’t want to cut out the crunch of a nut, then this is the way to go! It’s also much cheaper!
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons vanilla
2 large eggs
2-1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 package (12 ounce) Market Pantry White Chocolate Chips
1 cup slivered almonds, coarsely chopped
1. Heat oven to 375 degrees F.
2. Beat butter, both sugars and vanilla on medium speed until creamy. Beat in eggs until light and fluffy.
3. Blend in flour, soda and salt on low speed until mixed. Stir in chocolate chips and chopped almonds. Drop by rounded tablespoonfuls 2-inches apart onto ungreased baking sheets.
4. Bake 8 to 11 minutes or until edges are golden brown. Cool on baking sheet 2 minutes; remove to wire racks and let cool completely.
